Ingredients for the recipe:

  • 1100 gr. beef neck, cut into cubes of 2.5 cm.
  • 1100 gr. pork shoulder, diced 2.5 cm.
  • 1 tbsp. l salt or more to taste
  • Ground black pepper
  • 0.3 – 0.5 tbsp. olive oil
  • 2 large onions, chopped
  • 10 large cloves of garlic, minced
  • 0.25 Art. red chili powder
  • 2 tbsp. l Ancho Chili Powder
  • 1 tbsp. l ground cumin
  • 2 tsp oregano, ground
  • 6 tbsp. beef or chicken stock
  • 2 cans of pinto mottled beans (470 gr. Each), drain and rinse under water
  • Recommendations for serving: white rice, sour cream, chopped cilantro (fresh coriander), grated cheddar, chopped fresh or pickled jalapenos

Recipe preparation:

  1. Dry the meat with a paper towel and season with salt and pepper. Heat 2 tbsp. l oils in a cauldron or brazier on a moderately strong the fire. Fry the meat until golden brown in small portions. Add oil as needed. Move the meat to a plate.
  2. Leave in the cauldron only 2 tbsp. l oils. Fry the onions on medium heat for 10 minutes, scraping off adhering pieces meat with a wooden spoon from the bottom of the cauldron. Add the garlic and continue. cook another two minutes. Mix with chili powders, cumin and oregano and simmer another two minutes. Add 5 tbsp. broth and mix. Add the meat along with the meat juice. Bring to low boil. Season with salt and pepper to taste and leave the meat stew with ajar lid for about 3 hours.
  3. In a blender, mix half the beans and the remaining broth. Add the mixture to the cauldron along with the whole beans. Leave the stew in for 1 hour or more until the meat is soft. Season salt and pepper to taste and serve with rice as a side dish and serve with sour cream, chopped cilantro, grated cheddar, chopped fresh or pickled jalapenos. You can make chili con carne with hot peppers.
