Ingredients for the recipe:

  • 15 tortillas made from cornmeal, cut into 4 pieces (corn tortilla recipe, wheat tortilla recipe)
  • 1 tbsp. grated mozzarella or suluguni cheese
  • 2 tbsp. finely chopped grilled chicken meat
  • 1 small zucchini, sliced in 1.2 cm pieces.
  • 1/2 tbsp. vegetable oil
  • 1 tbsp. salsa sauce from the fruits of physalis vegetable
  • 1/2 tbsp. chopped green cilantro, plus some more for sprinkles
  • Sliced radish and chopped red onion for decoration

Recipe preparation:

  1. Heat in a large skillet over moderate heat. vegetable oil. Add half the tortillas and sauté for about 3 minutes until golden brown, turning them over with tongs. Dry paper towels. Fry the remaining cakes in the same way.
  2. Reduce the heat to medium, add zucchini, cook for 2 minutes until half ready. Add chicken, salsa, 3/4 tbsp. water and cilantro. Bring to a boil and cook for 2 minutes.
  3. Meanwhile, preheat the oven with the grill. In a 20-centimeter bake a pan topped with half the toasted cakes. From above put half the chicken mixture and 1/2 tbsp. cheese. Put it on top the remaining tortillas, then the remaining mixture with chicken and cheese. Bake under the grill for 2-3 minutes, until the cheese melts. Lay out top on a dish of chilakiles radish, sprinkle with red onion and cilantro.
