- Wash the chicken and dry it with a paper towel. Optimal to take not a whole chicken, but chicken legs and cut them into hips and lower legs.
- Rub the zest of the lemon.
- Making a marinade, mixing olive oil with rosemary, crushed garlic through a press, grated lemon peel, salt and pepper. Pickle the chicken for about an hour at room temperature, thoroughly lubricating it with marinade on all sides.
- In a deep frying pan, greased with olive oil, evenly fry the pickled chicken from all sides to golden shade.
- Add tomato paste and dry white wine. Stew another 15 minutes over low heat.
- Grind the anchovies. Add chopped anchovies, capers to the chicken and olives. We mix everything. Stew for another 7 minutes.
- Serve sprinkled with chopped herbs.
