Chicken soup with turnips and chickpeas

Ingredients for the recipe:

  • 3 tbsp. grilled chicken meat (skinless; approximately 340 gr.)
  • 2 tbsp. l coconut oil
  • 1 root (about 7 cm.) Ginger, peeled and chopped sliced
  • 4 cloves garlic, thinly sliced
  • 1 large turnip (about 300 gr.), Peeled and chopped cubes about 1 cm in size.
  • 2 tbsp. chopped kale
  • 2 tsp ground turmeric
  • Salt and freshly ground black pepper
  • 4 tbsp. chicken broth
  • 1 can (420 gr.) Canned chickpeas; drain the liquid, chickpeas rinse
  • Lemon juice to taste
  • Whole grain naan cakes for serving

Recipe preparation:

  1. Heat in a large frying pan over medium heat. Coconut oil. Add ginger and garlic; cook for 3 minutes, until ginger will not become softer, and garlic will not change color. Add turnips and cabbage kale and, stirring occasionally, cook about 4 more min., until the cabbage leaves wilted.
  2. Add turmeric and 1/2 tsp. salt and pepper; carefully mix. Add chicken stock and 3 tbsp. water. Bring to boil, then reduce heat and simmer for about 10 minutes, until turnip won’t get soft.
  3. Add chickpeas and chicken to the pan. Boost fire and bring soup to a boil. Cook another 5 minutes. Season with salt, pepper and juice lemon to taste. Serve with whole naan cereal cakes.
