- 1 pear, core, thinly sliced
- 1/3 Art. dried cranberries
- 2 tsp mustard, or any whole grain mustard
- 8 tbsp. young spinach (approximately 140 gr.)
- 4 endive leaves, cut crosswise into wedges
- 1/3 Art. roasted almonds
- 3.5 tbsp. l olive oil
- 1 tbsp. l cider vinegar
- 1 tbsp. l fresh lemon juice
- Salt, freshly ground pepper

Recipe preparation:
- In a preheated pan, fry the chicken breast in 1/2 tbsp. l olive oil until golden brown, 4 to 5 minutes each side. Allow to cool, then cut into thin slices.
- Meanwhile, cook cranberry vinegar: in a bowl for microwave mix cranberries, apple cider vinegar and 1 tbsp. l boiled water, cover, and cook for 45 seconds. at maximum power until the cranberries are completely softened. Allow to cool.
- Prepare a salad dressing: mix in a salad bowl cranberry vinegar, lemon juice, mustard, 1/2 tsp. salt, pepper. Pour 3 tbsp. l olive oil, whisk with a whisk. Add chicken meat, spinach, endive, almonds, pear, half cheese, salt and pepper to taste, shake.
- Divide into portions, and sprinkle with the remaining cheese.
