Marinade “Jerk”:
- 4 boneless skinless chicken breasts
- 1 bunch chopped green onions
- 3 large chopped cloves of garlic
- 1 chopped habanero chilli
- 1 lime juice
- 3 tbsp. l olive oil
- 2 tbsp. l soy sauce
- 1 tbsp. l brown sugar
- 2 tsp ground allspice
- 1 tsp chopped fresh thyme leaves
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- Salt and ground black pepper

Recipe preparation:
- Whip all the ingredients for the marinade in a food processor until homogeneous state. Put the chicken in a baking dish size 33×23 cm., salt and pepper to taste. Pour the meat Jerk marinade and mix. Cover the mold with cling film and refrigerate for at least 2 hours so that the meat soaked. If you have time, it’s best to leave the chicken pickle overnight.
- Preheat the grill to a moderate heat. Slightly grease the wire rack to prevent chicken and marinade from sticking. Remove the meat from the marinade, allow the excess to drain and lay it on grill. Close the grill and fry the chicken until cooked in for about 5 minutes on each side (jerk marinade should become black and caramelized in contact with bars).
