Ingredients for the recipe:

  • 4 halves of boneless and skinless chicken breasts
  • 1/4 tsp garlic powder
  • Grated zest and juice of half a lemon
  • 0.5 tsp mustard
  • 8 tbsp. different greens (arugula, Boston salad, watercress, radicchio, iceberg salad, corn)
  • Grated Pecorino Romano cheese

Recipe preparation:

  1. Light the charcoal grill until hot (if you put your hand 7 cm from the grate, you pull it away for 3 seconds).
  2. Place chicken between two pieces of cling film. WITH using a chop hammer or a small heavy frying pan beat the chicken evenly to a thickness of 0.5 cm. Remove the film and do the same with the remaining pieces.
  3. Lay the chops on a baking sheet and using a cooking brush grease slightly with vegetable oil. In a small bowl, mix 1 tsp salt, 0.5 tsp pepper and garlic powder. Evenly sprinkle the mixture on both sides with the mixture.
  4. Grease the grill rack with a napkin soaked in vegetable oil. Fry chops for 2 minutes on each side until full roasting and the appearance of lattice prints. Transfer to clean dish.
  5. In a large bowl, carefully mix the zest and lemon juice, mustard and 2 tbsp. l vegetable oil. Salt and pepper to taste. Add all the greens and toss to mix.
