- My chicken fillet, remove the veins, skin, film and dry.
- In a container we prepare a mixture for pickling, combining salt, sugar, half a teaspoon of ground red bell pepper and a teaspoon a spoonful of ground coriander. Stir the mixture until homogeneity. Pour in brandy.
- Put chicken in this mixture. Rub it with spices and dig into the center of the loose mixture with brandy so that all the meat is covered. Cover with a lid or cling film and remove for 1 day in the fridge.
- After a day, we take out the chicken and wash it under water, washing off all spices from the surface. Wipe the meat with a cloth.
- In the garlic press, squeeze the cloves of garlic and rub the meat with garlic. Mix ground red paprika with ground hot pepper (in in proportions of approximately 25 g of paprika + half a teaspoon of burning pepper per 1 kg of meat) and rub the meat. Wrap in cloth and put in the refrigerator for 3 days.
- After this time, replace the fabric with a new one and place it in refrigerator for 3 more days.
