  1. My chicken fillet, remove the veins, skin, film and dry.
  2. In a container we prepare a mixture for pickling, combining salt, sugar, half a teaspoon of ground red bell pepper and a teaspoon a spoonful of ground coriander. Stir the mixture until homogeneity. Pour in brandy.
  3. Put chicken in this mixture. Rub it with spices and dig into the center of the loose mixture with brandy so that all the meat is covered. Cover with a lid or cling film and remove for 1 day in the fridge.
  4. After a day, we take out the chicken and wash it under water, washing off all spices from the surface. Wipe the meat with a cloth.
  5. In the garlic press, squeeze the cloves of garlic and rub the meat with garlic. Mix ground red paprika with ground hot pepper (in in proportions of approximately 25 g of paprika + half a teaspoon of burning pepper per 1 kg of meat) and rub the meat. Wrap in cloth and put in the refrigerator for 3 days.
  6. After this time, replace the fabric with a new one and place it in refrigerator for 3 more days.
