Cherry tomatoes stuffed with chicken salad with apples

Cherry tomatoes are the perfect base for an elegant appetizer the size of one bite. Scrape the flesh out of them with a small spoon and fill the resulting cups with a salad of chicken, apples and parsley seasoned with mayonnaise. To let the salad lie beautifully in miniature bowls, cut the ingredients into very small cubes. A pinch of cinnamon along with rosemary leaves will give a snack interesting aroma and taste. Ingredients for the recipe:

  • 2 boneless and skinless chicken breasts (220 g each)
  • Water
  • 16 cherry tomatoes
  • 2 Granny Smith apples
  • 1 tsp lemon juice to prevent apples from darkening
  • 0.5 tsp ground cinnamon
  • 3 tbsp. l mayonnaise
  • 2 tsp chopped parsley
  • 16 small rosemary leaves to serve

Recipe preparation:

  1. Boil the chicken in water and set aside to cool. Gently cut the tops of the tomatoes (quite a bit) and scrape seeds. A measuring spoon with a volume of ΒΌ tsp. Peel the apples, remove the cores and chop finely, then drizzle with lemon juice. Finely chop the cooled chicken, salt, pepper and sprinkle with cinnamon, mix with mayonnaise and chopped parsley. Put chicken salad in tomatoes and garnish with leaves rosemary.
