Cauliflower with Parmesan and Pancetta, baked with milk sauce

A recipe for cauliflower cooked as a side dish can make any second dish of poultry, fish, cereals. Ingredients for the recipe:

  • 1 head of cauliflower, cut into large pieces (approximately 6 tbsp.)
  • 115 gr. pancettas, diced
  • 1/4 Art. butter, and a little more for lubrication
  • 1/4 Art. wheat flour
  • 1.5 tbsp. milk
  • 1 clove of garlic
  • 1 tsp red pepper flakes
  • 1 tbsp. grated parmesan
  • 1/4 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1/8 tsp freshly grated nutmeg
  • 1/3 Art. breadcrumbs

Recipe preparation:

  1. Fry pancetta in a small pan with medium to high temperature. Transfer to a separate bowl.
  2. Prepare the sauce: melt the cream in the same pan butter. Add flour and fry, stirring, for 2 minutes, then pour milk, and mix thoroughly. Add a whole clove garlic and red pepper flakes. Cook over low heat stirring with a wooden spatula until the sauce thickens, and will not stay on the shoulder blade; salt and season with ground pepper. Stir in parmesan, pancetta and nutmeg.
  3. Preheat the oven to 180 ° C.
  4. Bring salted water to a boil in a saucepan. Blanch cauliflower for about 2 minutes, then let cool for 5 minutes. Transfer the cauliflower to a pre-oiled creamy cabbage oil baking dish, size 20 to 30 cm. Top pour sauce and sprinkle with breadcrumbs.
  5. Place the baking tray with cabbage in the oven, and bake until ready, approximately 25 min. Serve immediately.
