- 170 gr minced pork
- 1 and 1/4 Art. grated fat-free Mexican cheese (approximately 140 gr.)
- 1 large yellow zucchini, sliced obliquely and then along thin slices
- 110 gr. cremini mushrooms with caps closed, without legs and finely chopped
- 410 gr. unsalted canned tomato, chopped cubes
- 3 tbsp. l extra virgin olive oil
- Coarse salt and freshly ground pepper
- 1 clove garlic
- 3 chopped green onion feathers
- 1/2 tbsp. breadcrumbs (preferably whole grain of bread)
- 1/4 Art. chopped parsley
- 3/4 Art. low-fat grained cottage cheese

Recipe preparation:
- Preheat the oven to 190 degrees. In a large frying pan on moderately high heat warm olive oil. Add minced meat, 1/4 tsp salt and a pinch of pepper. Cook kneading pieces, 2 minutes until slightly golden. Add the garlic, mushrooms, half green onion and 2 tbsp. l breadcrumbs cook 3 minutes. Add tomatoes, half parsley and 1/3 tbsp. water. Increase the heat to strong and cook for 3 minutes until the mixture slightly thicken.
- In a bowl, mix the cottage cheese, 3/4 tbsp. cheese and leftover parsley. Sprinkle a 22-centimeter baking dish into 3 tbsp. l breadcrumbs. Put half of the zucchini on top with a small margin around the edges, salt. Lay out two thirds of the meat sauce and cheese mixture. Put the remaining zucchini and salt. Add the remaining 3 tbsp. l breadcrumbs, meat sauce and 1/2 tbsp. cheese.
- Cover with foil and bake for about 20 minutes, until cheese will melt, and zucchini will not become soft. Remove the foil and turn on grill. Bake 2 minutes until golden brown. Sprinkle on top the remaining green onions.
