- Preheat the oven to a temperature of 200 degrees. Carrots peel and cut lengthwise into four parts, then cut into pieces 5 cm long. Spread the carrots on a baking sheet (previously covered with parchment). Pour olive oil (2 tbsp.), sprinkle with salt and cayenne pepper.
- In a mortar, grind the seeds of zira, fennel and coriander, sprinkle carrots. Stir and place the baking sheet in the oven for 40 minutes. Cool carrots ready.
- Rub the zest of orange. Peel and chop the garlic, mix with zest. Add lemon juice, salt and olive oil (2 Art. l.), mix well.
- Peel the orange, put it on a plate and remove the pulp. We alter carrots, pulp of oranges, olives, arugula and water salad resulting dressing.
