  1. Preheat the oven to a temperature of 200 degrees. Carrots peel and cut lengthwise into four parts, then cut into pieces 5 cm long. Spread the carrots on a baking sheet (previously covered with parchment). Pour olive oil (2 tbsp.), sprinkle with salt and cayenne pepper.
  2. In a mortar, grind the seeds of zira, fennel and coriander, sprinkle carrots. Stir and place the baking sheet in the oven for 40 minutes. Cool carrots ready.
  3. Rub the zest of orange. Peel and chop the garlic, mix with zest. Add lemon juice, salt and olive oil (2 Art. l.), mix well.
  4. Peel the orange, put it on a plate and remove the pulp. We alter carrots, pulp of oranges, olives, arugula and water salad resulting dressing.
