Carne Assad is the Mexican name for grilled meat without oils. The name itself is translated from Spanish as “fried” meat. “Most often, cheap cuts are taken beef, such as flank, flap steak, it is very saturated beefy taste, but really tender and juicy becomes after pre-marinated in orange juice with thyme and oregano. Beef and Marinade
- 1 kg. thinly chopped flap steak (flank pulp)
- 2 tbsp. l coarsely chopped fresh thyme leaves
- 1 tbsp. l crumbled dried oregano
- 1 tbsp. freshly squeezed orange juice (3 oranges)
- 2 tbsp. l vegetable oil

- 4 bogillo rolls, sliced lengthwise
- Mayonnaise
- 2 avocados, sliced
- 2 sliced tomatoes
- Jalapeno Pickled Peppers

Recipe preparation:
- Put the meat in a glass dish measuring 22×32 cm. Sprinkle meat on both sides with salt and black pepper. Mix with thyme and oregano, evenly covering beef with spices. Pour orange juice. Leave the meat to marinate for 30 minutes.
- Preheat charcoal or gas grill or use grill pan, heating it on a stove over high heat.
- As soon as the grill is hot, fry the meat for 5 minutes each hand, turning it over with forceps. Remove the meat from the grill and leave under the lid for 10 minutes.
- Cut the beef into pieces matching the size of the bun bolillo. Lubricate 1 tbsp. l mayonnaise inner surface of each cut buns. Salt and pepper. Lightly toast buns grilled with slices down, about 1 minute. Put a slice of meat on the inside of the bun. Add avocado slices and mugs tomatoes. Serve marinated jalapenos sandwiches.
