- 1.5 tbsp. long grain rice
- 2 tbsp. l olive oil
- 1 small onion, chopped
- 1/2 green bell pepper, clear of seeds and slice
- 1 tsp ground annatto seeds
- 2.5 tbsp. water
- 2 tsp salt
- 1 bay leaf
For beans:
- 250 gr black bean
- 12 tbsp. water
- 1 bay leaf
- 2 tbsp. l olive oil
- 1 medium onion, chopped
- 1 green bell pepper, remove seeds and stalk, slice
- 10 cloves of garlic, chopped
- 2 tsp ground cumin
- 2 tsp dried oregano
- 1 tsp ground coriander
- 1 tbsp. l red wine vinegar, plus a little to serve
- 1 tbsp. l salt

Recipe preparation:
- Annatto Fried Rice in a medium saucepan with with a tight-fitting lid, heat the oil over moderate heat. Add onions, peppers, annatto and cook, stirring, for about 2 minutes., until the vegetables are slightly softened. Add rice and cook, stirring, until it is browned, about 2 minutes more. Add water, salt, bay leaf and bring to a boil. Kitchen towel tight wrap the pan lid. Cover the rice, turn down the heat for the weak boil and cook for 20 minutes.
