  1. Peel the eggplant, cut into cubes and fry on pan with the addition of olive oil.
  2. In a separate frying pan or in a saucepan, caramelize onions with sugar until golden, add capers (if not found, you can replace with chopped pickles), olives, wine vinegar and some olive oil.
  3. Stew for 5 minutes, then add eggplant and tomato paste. Cook another 8-10 minutes.
  4. Finely chop the fresh basil, add to the dish, salt, pepper, cook for another minute (salt can not be added, as capers themselves are salty).
