Cajun-style pork loin with leaf cabbage

Ingredients for the recipe:

  • 2 tbsp. l extra virgin olive oil
  • 3 tbsp. l chili powder (a mixture of spices with chili pepper, see recipe)
  • 1 tbsp. l hot jalapeno peppers
  • 900 gr. boneless pork loin (approximately 6 thick pieces)
  • Coarse salt
  • 4 chopped celery stalks
  • 1 large head of white onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 2 tbsp. lightly salted chicken stock
  • 400 gr. canned unsalted tomato, chopped cubes
  • 420 gr. canned white beans without salt, pre washed
  • 140 gr. chopped kale kale (about 6 tablespoons)

Recipe preparation:

  1. Preheat the grill. Mix 1 tbsp in a bowl. l olive butter, chili powder and hot sauce. Salt pork with 1/2 tsp. salt. Pierce the meat with a fork over the entire surface and rub with a mixture spices on both sides. Lay on the grill mounted above pan and set aside.
  2. The remaining 1 tbsp. l warm olive oil moderately high heat in a roasting pan or large pan with a thick bottom. Add celery, onion, garlic and the remaining 2 tbsp. l chili powder. Cook for 8 minutes, stirring until vegetables are clear.
  3. Add chicken stock and tomatoes to the pan. Cook about 7 minutes, until the mixture evaporates by a third. Add beans and cabbage, mix well. Reduce heat to medium, cover cover and simmer for 7 minutes until cabbage is soft. (You can add up to 1/2 tbsp. water if the mixture is very thick). Salt.
  4. Meanwhile, bake pork in the oven for 4-6 minutes until golden. Turn over, cook another 2 minutes or more until full readiness. Serve the pork loin with cabbage and beans.
