Cabbage soup

Tasty, rich and at the same time healthy vegetable and mushrooms. Despite the fact that the soup is called cabbage, amazing many other vegetables give it a taste: tomatoes, onions, carrots, celery, sweet pepper. All vegetables are grated, cabbage shredded, and mushrooms finely chopped. Ingredients first fried in a pan to mix their juices and tastes, and then poured with grated tomatoes and chicken broth. Soup is boiled until soft cabbage. You can adjust the time yourself on which vegetables you prefer: more crispy or soft.   • Half cabbage, chopped
  • 2 tbsp. l olive oil
  • 220 gr chopped champignons
  • 2 large onions, chopped
  • 1 bunch of celery stalks, grated *
  • 3 carrots, grated
  • 2 green peppers, peeled from the stalk and seeds and grated
  • 2 garlic cloves, grated
  • 2 tbsp. l low salt soy sauce
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 can 800 gr. canned mashed tomatoes
  • 4 tbsp. lightly salted chicken stock

Recipe preparation:

  1. In a large pot with a thick bottom over a moderate high heat heat the oil until it starts to flicker. Add mushrooms and fry, stirring until they are browned, for about 5 minutes. Add the onion and fry, stirring, until soft and golden. about 8 minutes. Add celery, carrots, peppers and garlic and fry, stirring, until vegetables start to fry and go aroma, about 5 minutes. Stir in soy sauce, garlic and onion powder, 2 tsp salt and 1 tsp. black pepper.
  2. Then add the cabbage to the pan and stir until it is will start to fade, about 2 minutes. Pour in mashed tomatoes, chicken broth and 1 tbsp. water. Shuffle to make everything evenly to distribute. Bring to a boil.
