  1. In a bowl, mix mustard, chopped garlic, peppercorns, oil (2 tablespoons) and salt (1 tablespoons). A piece of boar carefully rinse, spread in a large bowl, add prepared marinade and rub well into the meat. Cover the boar in the marinade and cool 1-2 days.

  2. Pickled wild boar meat is sent to hot oil (3-4 tbsp.) and fry over medium heat from 2 sides to brown. Add the champignons cut in half and fry.

  3. Onions, celery root, carrots, chop coarsely, spread next to the boar, add dried mushrooms, ground pepper, bay leaf, salt and pour the wine. Stew boar meat open 3-4 minutes on high heat. Then pour water to cover the vegetables, cover and simmer for 2 hours 20 minutes. Watching like water evaporate, add more.

  4. We take out the juicy boar from the pan, cut it into pieces, put on plates, add stewed vegetables, fried potatoes, pickles and serve immediately with a crispy baguette.
