Braised Kale

Ingredients for the recipe:

  • 4 slices of bacon, cut into strips
  • 1 onion, cut into cubes
  • 2 bundles of kale, coarsely chopped
  • 4 tbsp. chicken broth
  • 4 tbsp. boiled water
  • Some apple cider vinegar
  • A little hot sauce
  • Salt and Freshly Ground Peppers

For Cajun seasoning:

  • 2 tbsp sweet spanish paprika
  • 1 tbsp chili powder (seasoning recipe see here)
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp ground coriander
  • 1 tbsp dried thyme
  • 1 tbsp dried oregano
  • 1 tbsp ground black pepper
  • 1 tsp cayenne pepper
  • 1/4 tsp cumin (optional)

Recipe preparation:

  1. Heat fat from bacon in a large skillet over medium heat, put the bacon on paper towels to absorb excess fat. Add chopped onion and 2 tsp to the pan with fat. Cajun seasoning, fry, stirring, 5 min. Then add chopped kale in portions, and fry a little.
  2. Pour the chicken stock and water into the pan and bring to a boil. Reduce temperature and simmer until greens become soft, about 2 hours. Stir in hot sauce and fried bacon. Sprinkle with apple cider vinegar, salt and season with ground pepper over to taste.
