Braised Kale Pork

Difficulty: easy Servings: 4 In the recipes volumetric containers are used in volume: 1 cup (tbsp.) – 240 ml. 3/4 cups (st.) – 180 ml. 1/2 cup (tbsp.) – 120 ml. 1/3 cup (Art.) – 80 ml. 1/4 cup (st.) – 60 ml. 1 tablespoon (tbsp) – 15 ml. 1 teaspoon (tsp) – 5 ml.

Ingredients for the recipe:

  • 700 gr. pork tenderloin, cut into small pieces
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/4 Art. olive oil plus more to spray
  • 700 gr. sweet potatoes, peeled and cut into pieces
  • 1/2 onion, finely chopped
  • 4 cloves of garlic, 3 of them chopped and 1 finely grated
  • 450 gr frozen kale, thaw and to dry
  • 3 tbsp. chicken broth
  • 1 tbsp. chopped parsley
  • Thinly sliced red jalapenos for serving

Recipe preparation:

  1. Combine pork, cumin and paprika in a bowl; salt, pepper and mix. Heat a large pot or cauldron at high temperature add 2 tbsp. l olive oil. Add the pork to one layer and fry without stirring until brown crusts, about 2 minutes. Stir and continue cooking, stirring until brown, 4 to 5 minutes; put on a plate.
  2. Add the remaining 2 tbsp to the pan. l olive oil, sweet potatoes, onions, chopped garlic and 1/4 tsp. salt. Cook over high heat, stirring until onion softens, about 2 minutes Add cabbage, chicken broth and 1 tbsp. water; cover and bring to a boil. Open the lid, reduce heat to medium and simmer until vegetables are soft, from 8 to 10 minutes
  3. Reduce heat to a minimum. Transfer 1 tbsp. vegetables with a small amount of broth in a blender; add parsley, grated garlic and 1/4 tbsp. water and mashed. Return the pork to the pan and cook until cooked for about 2 minutes. Stir with mashed vegetables and heat up; season with salt and pepper. Split pork with vegetables between the bowls, lay the jalapeno slices on top and sprinkle olive oil.
