Wild boar stew with cherries

To cook boar meat with cherry you will need:
- Wild boar – 1,5 kg.
- Vinegar (can be wine or balsamic) – to taste
- Juniper berries – 5-6 pcs.
- Onions (not salad, but spicy, “evil”) – 3 pcs.
- Celery root, parsnip (if you find), parsley, garlic.
- Fat (if lean boar) – 50 g.
- Cherry – 200g.
- Sugar, salt, spices (you can Provencal herbs).
- Red wine (better fortified) – 50g.
- Mustard – 50g.
If you buy a ready-made mix of spices, pay attention to its composition. Rosemary, turmeric (saffron, ideal for game) expensive), tarragon.
You can cook boiled stew with cherry So:
Rinse the wild pork with running water and chop along fibers. It is better if the pieces are slightly smaller than shish kebab. Then “boar” is better marinated.

In the pan, put the lard, melt the fat, put the chopped onions, plant roots. As soon as everything is fried, add meat boar and simmer under a closed lid until cooked. Cloves of garlic mix with meat 10 minutes until cooked.
