- 2 cans (400 gr.) Of tomato cubes with green chili pepper (drain brine)
- 1/4 Art. olive oil
- 2 finely chopped onion heads
- 2 chopped green bell peppers
- 3 cloves garlic
- 4 bay leaves
- 1 tbsp. l ground cumin
- 2 tbsp. water
- 1/4 Art. cider vinegar
- Salt and ground black pepper

Recipe preparation:
- On a moderate to high heat, heat a large pot and pour oil in it. Add onions, peppers, garlic, bay leaves and cumin. Stir and fry for 8 minutes. Add rice, black beans, tomatoes, water, vinegar, salt and pepper. Bring to a boil, cover pan the lid and reduce heat to low. Cook about 40 min until the rice is soft. Serve hot.
