  • 4 cans (400 gr.) Black beans (drain the brine and rinse)
  • 2 cans (400 gr.) Of tomato cubes with green chili pepper (drain brine)
  • 1/4 Art. olive oil
  • 2 finely chopped onion heads
  • 2 chopped green bell peppers
  • 3 cloves garlic
  • 4 bay leaves
  • 1 tbsp. l ground cumin
  • 2 tbsp. water
  • 1/4 Art. cider vinegar
  • Salt and ground black pepper

Recipe preparation:

  1. On a moderate to high heat, heat a large pot and pour oil in it. Add onions, peppers, garlic, bay leaves and cumin. Stir and fry for 8 minutes. Add rice, black beans, tomatoes, water, vinegar, salt and pepper. Bring to a boil, cover pan the lid and reduce heat to low. Cook about 40 min until the rice is soft. Serve hot.
