Black bean quesadilla and mitlof

Hearty and delicious wheat tortilla quesadilla stuffed with spicy minced meat, black beans and cheddar cheese, which has a light nutty flavor. Quesadilla

  • 2 tbsp. fried meatloaf mitlof, recipe see below
  • 400 gr. black bean, no liquid
  • 1 chopped green onion
  • 1 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • 2 tbsp. l (30 gr.) Butter
  • 8 tortilla cakes with a diameter of 20 cm.
  • 2 tbsp. grated cheddar cheese

Mitlof

  • 700 gr. ground beef with pork (for fat regulation)
  • 1/3 Art. breadcrumbs
  • 1/3 Art. milk
  • 1/3 Art. chopped parsley
  • 1 large egg
  • 3 tbsp. l Worcester sauce
  • 1 small onion, chopped
  • 1 tsp ground chili
  • 2 garlic cloves, grated or minced
  • 1 tbsp. l vegetable oil
  • 1/2 tbsp. ketchup
  • 1-2 tbsp. l brown sugar
  • 1 tbsp. l apple cider vinegar

Hot sour cream

  • 1/2 tbsp. sour cream
  • 1/2 tbsp. green cilantro plus more for decoration
  • 1/2 lime juice
  • 2 tsp hot chili sauce

Recipe preparation:

  1. Prepare hot sour cream with cilantro: using manual beat the sour cream, cilantro, lime juice and pepper sauce until homogeneity. Leave to infuse and mix tastes.
  2. Make a mini mitlof: mix in a large bowl breadcrumbs, milk, parsley, egg, Worcester sauce, onions, ground chili and garlic. Add the minced meat, salt and pepper, mix by hand until the components are combined. Form 6 oblong cutlets with a size of 8 by 10 cm.   5. Make quesadillas: Mix the mini mitlof in a bowl, black beans, green onions, cumin, cayenne pepper, salt and black pepper. Melt 1/2 tbsp. l (30 gr.) Butter in large pan with non-stick coating over medium heat. Put with tortilla in a pan, sprinkle 1/4 tbsp. put cheese on top a quarter of the meat mixture and another 1/4 tbsp. cheese.
