Benedict Eggs with Cheese Sauce (a sandwich)

Benedict eggs cooked in the microwave and laid with bacon on corn bread.

Ingredients for the recipe:

  • 2 large eggs
  • 4 slices of bacon
  • 1 pack of corn bread mix per microwave
  • 4 slices of cheese
  • 2 tbsp. l milk
  • 1 tsp hot sauce
  • 1 tsp mustard
  • Chopped chives for decoration

Recipe preparation:

  1. Pour into a liter bowl suitable for a microwave, water to half. Break the eggs into it and pierce the yolks with a skewer or a toothpick. Microwave at high power 1-1.5 minutes until the proteins harden, and the yolks remain liquid. Remove from the microwave and set aside.
  2. Cover the microwave plate with two layers of paper towels and put bacon on them. Microwave on high power for about 3 minutes, until the bacon is crispy. Set aside.
  3. Prepare the corn bread mix according to the instructions on packaging. Bake 2 servings of bread the size of an English muffin in microwave bowl, following the instructions on the packaging. Get out bowl and put on plates.
  4. Tear the cheese into pieces and put them in a small bowl for microwave ovens. Add milk, spicy sauce and mustard, sprinkle salt and pepper. Microwave at high power 30 seconds, mix, then add another 30 seconds or until cheese will not melt and the sauce will not become homogeneous.
  5. Put 2 pieces of bacon on each corn muffin. On each put a poached egg and pour half the cheese sauce. Sprinkle chives with onions and serve. Recipe collection with eggs: fried eggs, omelet, spanish tortilla, fritata, sauce from egg yolk.
