Ingredients for the recipe:
- 4 boneless New York steaks (340-400 gr. Each), portioned pieces of thin edge of lumbar back of beef carcass
- 450 gr small tomato
- Coarse salt
- 1 tbsp. l coriander seed
- 1 tbsp. l black pepper peas
- 2 tsp paprika
- 2 tsp red pepper flakes
- 1 tsp dill seed
- 1 clove garlic
- Cold Pressed Extra Virgin Olive Oil

Recipe preparation:
- Preheat the oven to 120 degrees. Cover the baking sheet with foil. Pour 2 tbsp evenly on a baking sheet. l salts, coriander seeds, black pepper peas, paprika, red pepper flakes, seeds dill and minced garlic, bake for 30 minutes, until the garlic will dry out. Cool. Transfer the mixture to a mortar and a little knead. (Spicy salt can be done in advance, for 1 week, and store in an airtight container).
- Remove the steaks about 1 hour before cooking to they warmed to room temperature. Sprinkle on each side 1/2 tsp cooked hot salt, wrap with cling film and set aside.
- Prepare the grill for indirect heating and preheat to high temperature: in a coal grill, slide the coal into one side, in the gas grill, turn off half of the burners. Cook on the cold side of the grill. Drain the salt from the meat, dry it and lightly grease with olive oil. Fry on the hot side of the grill approximately 2 minutes before the formation of characteristic marks. Then turn the steaks 30 degrees and cook for another 2 minutes. Turn the meat over and repeat the procedure, on the other hand. Then shift the steaks to the cold side of the grill and cook another 5 minutes on each side to medium fry. Lay out the meat on a cutting board and leave for 5-10 minutes.
- Meanwhile, fry on the hot side of the grill, turning, tomatoes for 5 minutes before the formation of characteristic marks. Serve to a table with steaks and remaining spicy salt.
