Beef patties in a pan

Cutlets “came” to Russian cuisine from European. It was originally a piece of meat with rib bone (now called a natural cutlet on the bone). Today the cutlet is a dish of minced meat in the form of cakes. Cooked according to this recipe, cutlets are obtained very juicy, fragrant and piquant. Ingredients for the recipe:

  • 1/3 Art. breadcrumbs
  • 1/3 Art. milk
  • 1/3 Art. chopped parsley
  • 1 large egg
  • 3 tbsp. l worcester sauce
  • 1 finely chopped small onion
  • 1 tsp chili powder
  • 2 chopped garlic cloves
  • 700 gr. beef, pork and / or veal mincemeat
  • 1 tbsp. l vegetable oil
  • 1/2 tbsp. ketchup
  • 1-2 tbsp. l brown sugar
  • 1 tbsp. l cider vinegar

Recipe preparation:

  1. Mix breadcrumbs, milk, parsley, egg, sauce Worcester, onions, chili powder and garlic in a large bowl. Add mince, season with salt, pepper and mix thoroughly with your hands. Form a mass in the form of six oval cutlets 8-10 cm long.
  2. Pour the vegetable oil into a large non-stick pan and put it on a big fire. Put the patties and fry in for 3 minutes on each side.
  3. Combine ketchup, sugar and vinegar in a bowl and coat with several tablespoons cutlet sauce. Add 1/2 tbsp. water in the pan cover and simmer until cooked for 15 minutes on slow the fire.
  4. Put the cutlets on a plate. Add the remaining mixture from ketchup in a pan and cook over high heat, constantly stirring for 3-5 minutes. Serve four cutlets by watering hot gravy, and leave two for quesadillas.
