Ingredients for the recipe:
- 1 (9 kg.) Turkey
- 2 heads of garlic
- 1 onion, cut into 6 pieces
- 2 apples, cut into four parts
- 1 bunch of sage
- 1 onion fennel, cut into 6 pieces
- 1 small carrot, cut into large slices
- 480 gr butter
- 8 tbsp. lightly salted chicken stock
- 4 bay leaves
- 1/4 Art. flour
- 1 tbsp. l balsamic vinegar
- Salt and Freshly Ground Peppers

Recipe preparation:
- Prepare the turkey: 1 hour before cooking leave thawed turkey at room temperature. Then remove the neck and remove the giblets, leave for sauce. Dry the turkey inside and outside, with paper towels, grate with salt and pepper. Stuff the turkey with 1 head of garlic, cut into four parts, half the onion, apple slices and half a bunch of sage. Put the turkey in the baking dish, breast up, put the remaining vegetables and herbs around.
- Melt in a pan 360 gr. butter add 3 tablespoons finely chopped sage, salt and pepper. Fill the syringe with the mixture and inject half the mixture into the breast and hips, grate the turkey with the remaining mixture.

- Prepare the sauce: shift the baked vegetables and fruits into blender, add turkey juice and fat, pour in flour and cook puree, grind until smooth. Transfer received mashed potatoes in the broth.
