  1. Select strong eggplants, wash, cut into circles. Leave in salt for half an hour, rinse with cold water, recline on colander.
  2. Wash tomatoes of the same size, also chop circles.
  3. Grate hard cheese.
  4. Peel, wash, pass the garlic through a press.
  5. In a baking dish put a layer of eggplant, previously grated garlic.
  6. The next layer of tomatoes, pepper, salt. Sprinkle with grated cheese.
  7. Put the form in the oven for half an hour at a temperature of 180 degrees. Serve hot, garnish with chopped herbs.
