  1. Cut the garlic head into 2 parts, sprinkle with olive oil and loosely wrap in foil.

  5. Ready eggplant cut lengthwise into two halves, with a spoon take out the flesh, cool and chop coarsely.
  6. Put eggplant pulp in a salad bowl, salt, sprinkle lemon juice, add pepper and mix.
  7. Squeeze the garlic from the peel and chop finely. Add to eggplant.
  8. Cut the tomatoes into slices.
