Artichoke Chicken with Lemon Sauce

From canned artichoke cores you can make delicious dish, if you fry them in a pan with pieces of chicken in spices and sauce based on lemon juice and wine vinegar. After evaporation it will acquire an amazing taste that blends perfectly with vegetables, and with chicken. Sprinkle cooked chicken with artichokes lemon zest and fresh basil, and a light meal in Mediterranean style done. Ingredients for the recipe:

  • 0.7 kg skinless chicken and boneless chopped cubes
  • 2 tbsp. l olive oil
  • Half medium onion, finely chopped
  • 3 medium cloves of garlic, finely chopped
  • 2/3 Art. dry white wine
  • 1/3 Art. water
  • 1 tsp freshly squeezed lemon juice
  • 0.5 tbsp. thinly sliced basil leaves
  • 1 tsp lemon zest
  • Salt and ground black pepper
  • 1.5 tbsp. artichoke cores cut into 4 parts (you can canned but not frozen)

Recipe preparation:

  1. In a large frying pan over medium heat, heat the olive butter. When it starts to flicker, add onion and garlic, salt, pepper and fry until golden brown, about 4 minutes. Add fry the chicken and stir occasionally until it is well browned from all sides, about 5 minutes. Add artichokes and fry, lightly breaking them, about 3 minutes.
  2. Pour in wine, water, lemon juice and scrape the bottom of the pan. Fry until the smell of alcohol evaporates and the sauce is slightly thickens, about 5 minutes. Remove from heat, stir in basil and lemon zest and serve.
