Halve the eggplant in circles.

Grind pepper and onion into cubes, carrots – into strips.

Fry eggplant on both sides and put in a pan with thick walls.

Fry onions, carrots and peppers and add to eggplant.

Grind cilantro, basil and parsley, grate garlic on a shallow grater.

Peel the tomatoes, beat the pulp with a blender, along with grains and add to the stewpan. Salt, pour oil, add spices and mix.

Stew under the lid for 15 minutes.
