Ingredients for the recipe:
- 900 gr. salted cod (soak, rinse, dry and chop pieces)
- 450 gr ready-made long-grain white rice
- 200 gr. frozen green peas
- 3 medium-sized peeled and chopped tomatoes
- 1/2 head iceberg lettuce
- 6 hard boiled eggs
- 170 gr olives
- 3 tbsp. l plus some more portuguese olive oil
- 2 tbsp. chopped onions
- Salt and ground black pepper
- 2 tbsp. l chopped garlic
- 1 tbsp. chopped green onions
- 2 tbsp. l finely chopped fresh parsley leaves
- 1 tbsp. l crushed red pepper
- Juice 1 Lemon

Recipe preparation:
- In a large pan, heat 3 tbsp. l olive oil. When the oil will heat up, put onions. Salt and pepper. Sauté until golden brown, about 3-4 minutes. Add the garlic, green onions, parsley, peas and tomatoes. Salt and pepper. Continue cooking for 2-3 minutes. until the tomatoes are soft.
- Add cod and crushed red pepper. Keep going cook for 3 minutes, stirring constantly. Remove from heat and put in a bowl. Add rice and lemon juice, mix thoroughly. Pour olive oil so that the rice is not dry. At add spices again if necessary. Spread lettuce leaves on the dish. Put rice salad on the leaves with a spoon. Garnish with eggs and olives.
