The recipe for a warm salad of rigatoni pasta with soaked shallots, boiled broccoli, radishes and feta cheese. WITH dressing from sherry vinegar and orange zest. AT recipes use measured containers with a volume of: 1 glass (tbsp.) – 240 ml 3/4 cup (st.) – 180 ml. 1/2 cup (tbsp.) – 120 ml. 1/3 cups (st.) – 80 ml. 1/4 cup (st.) – 60 ml. 1 tablespoon (tbsp. l.) – 15 ml. 1 teaspoon (tsp) – 5 ml.
Ingredients for the recipe:
- 1 bunch of broccoli (approx. 280 gr.), Cut the stems into length 2.5 cm, leave small inflorescences
- 350 gr wholemeal rigatoni pasta
- 200 gr. feta cheese crumble
- 1 small shallots, cut with wedges
- 1 bunch of radish, thinly chopped
- 1 tbsp. l sherry vinegar or red wine vinegar
- 1/2 tsp finely grated orange peel
- 3/4 tsp coarse salt, and even if necessary
- Freshly ground black pepper
- 3 tbsp. l olive oil

Recipe preparation:
- In a bowl filled with cold water with ice, place shallots for 10 minutes; drain the water.
- Bring salted water to a boil in a saucepan. In a separate prepare cold water with ice in a bowl; to salt. To place broccoli in boiling water, cook for 2 – 3 minutes. Add radishes, and cook another 30 seconds. Remove vegetables from boiling water with skimmers, and immediately immerse in ice water. Put in a colander and let the liquid drain.
- In the same pot of boiling water add rigatoni, cook, stirring for approximately 8 to 9 minutes. Drain, give stand.
- In a salad bowl, prepare a dressing: beat sherry vinegar, grated orange peel, 3/4 tsp salt and ground pepper to taste. Continuing to whisk, gradually pour in olive oil.
- Add rigatoni, shallots, boiled broccoli and radishes, shake. Sprinkle feta cheese on top. Serve room salad temperature.
