Ingredients for the recipe:

  • 4 large eggs
  • 4 corn tortillas with a diameter of 15 cm., Warmed up
  • 2 small tomatoes
  • 1 small onion
  • 1 medium jalapeno chopped
  • 2 cloves of garlic; 1 chopped, 1 crushed
  • 1/2 tsp hot sauce
  • 1 tsp ground cumin
  • 2 tbsp. l plus 2 tsp olive oil
  • 1 can (440 gr.) Canned black beans, rinse and drain the liquid
  • 1/2 tbsp. crumbled feta
  • 1/4 Art. fresh chopped cilantro

Recipe preparation:

  1. Cook the salsa: place the grater in a large bowl. Grate tomatoes and onions. Add jalapenos to the same bowl, chopped garlic, hot sauce, cumin, salt and pepper to taste. Heat the medium pan over low heat and pour 2 tsp. olive oil. Fry the salsa in oil until it is slightly thickens (3 minutes). Pour into a bowl. Add the beans to the same pan with crushed garlic, 1/2 tbsp. warm water and a pinch of salt. Cook over low heat until completely warm. mixture, slightly crushing with a fork.
  2. Meanwhile, heat the remaining 2 tbsp. l olive oil in another pan. Fry eggs in the form of fried eggs so that the yolk remained liquid above. Season with pepper. Put 1 warm tortilla on each plate. Distribute the beans between servings, then add the fried egg, some salsa and cheese on top. Sprinkle cilantro and serve the remaining salsa.
