Texas Stewed Beef Sandwich

Ragged beef is one of the classic dishes of the Southwestern United States. Meat cooks for a long time and becomes so soft and delicate that it can easily be torn into fibers.   • 1 onion, peeled, sliced into thin half rings
  • 1 tbsp. l chili pepper powder
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 1/4 Art. cider vinegar
  • 1.5 tbsp. water
  • 1 can (410 gr.) Whole tomatoes in own juice
  • 2 cans of canned whole chipotle peppers in sauce adobo
  • 2 bay leaves
  • 3 tbsp. l molasses (molasses)
  • Pickled jalapenos for serving
  • Cole Slow Salad to serve

Recipe preparation:

  1. Add plenty of salt and pepper to your taste. Preheat a large thick-walled pan over moderately high heat. Pour there vegetable oil and heat it until smoke appears. Put the meat and sauté, turning once in the process, until brown on both sides for about 10 minutes. Put the meat in a slow cooker; leave the pan on fire.
  2. Add garlic, onion, chili seasoning, coriander and cumin to the juice from the meat left in the pan and stir until tender flavor for about 1 min. Add apple cider vinegar and simmer until it almost completely evaporated, scraping the mixture from the bottom of the pan wooden spoon. Add water and pour the mixture onto the brisket. Mash tomatoes with your fingers and put in a slow cooker; add tomato juice, chipotle, bay leaf and molasses. Close slow cooker, and set the timer for long cooking, about 8 hours to a state where it will be easily divided into thin fibers using a fork. Take out and discard the bay leaf.
