Coconut Rice Porridge in a Slow Cooker

Porridge is cooked in a slow cooker from short-grain brown rice in a mixture coconut milk and coconut water that turns contained in rice starch in an amazingly gentle, creamy pudding. Besides pleasant texture coconut milk gives a sweet exotic aroma and taste. In the finished porridge, mix the butter and lemon zest and serve warm for breakfast or chilled for dessert. Ingredients for the recipe:

  • 3 tbsp. coconut water
  • 400 ml. low calorie coconut milk
  • 0.5 tbsp. Sahara
  • 1 tbsp. l vanilla extract
  • 0.5 tsp coarse salt
  • 1 and 1/4 Art. short grain brown rice
  • 2 tbsp. l (30 gr.) Butter, chopped in small pieces
  • 1 tsp finely grated lemon zest

Recipe preparation:

  1. Sprinkle a 5-6 liter slow cooker with a cooking spray. Вslow cooker mix coconut water, coconut milk, 1.5 tbsp. water, sugar, vanilla and salt until the sugar is completely dissolved. Stir in rice and cook with high heat for 4 hours or with weak heating for 5-6 hours.
  2. Open the lid, mix well and let it brew 15 minutes. Transfer to a large bowl and stir in the butter. Continue to cool the porridge, stirring until it becomes warm. Stir in the zest of lime. Serve rice porridge warm or place in refrigerator to cool. Decorate with any toppings.

    Note

    Choice of toppings: diced fresh or dried mangoes and pineapples, fresh or thawed raspberries, toasted coconut shavings, finely chopped ginger candied fruits.
