Sugar portioned cassettes oranges

Cassata is a Sicilian dessert that consists of biscuit shell filled with ricotta filling. Cook a la carte cassettes that do not require baking. Take a biscuit Savoyardi cookies, and since these cassettes will be with orange taste, soak it in a mixture of orange syrup and liquor. The filling of cassata will be a delicious cream of ricotta, cream, grated chocolate, orange liquor and candied orange. And as decorate the dessert, prepare candied varieties of pointed candies (with navel), they themselves are sweeter and juicier than ordinary ones, and after cooking in syrup will be just superb. Difficulty: medium Servings: 6 The recipes use dimensional capacity: 1 cup (tbsp.) – 240 ml. 3/4 cup (st.) – 180 ml 1/2 cup (tbsp.) – 120 ml. 1/3 cup (st.) – 80 ml. 1/4 cups (st.) – 60 ml. 1 tablespoon (tbsp.) – 15 ml. 1 teahouse spoon (tsp) – 5 ml.

Ingredients for the recipe:

Candied oranges

  • 2 pointed oranges
  • 1.5 tbsp. Sahara

Filling

  • 450 gr ricotta
  • 1/3 Art. powdered sugar
  • 1/4 Art. dark chocolate grated on a coarse grater
  • 1/4 Art. chopped orange candied fruit
  • 2 tbsp. l whipping cream
  • 1 tbsp. l orange liquor
  • 1 tsp vanilla extract

Assembly

  • 0.5 tbsp. candied oranges syrup
  • 0.5 tbsp. water
  • 3 tbsp. l orange liquor
  • 200 gr. Savoyardi cookies

Recipe preparation:

  1. Cut the oranges into thin circles and remove the seeds, not tearing circles.
  2. Boil water in a saucepan and throw slices of oranges there. Boil them for 1 minute, then drain the water.
  3. Pour into the pan 1.5 tbsp. fresh water and sprinkle sugar. Bring to a boil and drop the slices of oranges into the water. Cook with low boil, without lid, 20 minutes. The peel will become slightly transparent (but not completely).
  4. Remove the pan from the stove and cool the oranges in syrup until room temperature. Candied oranges can be stored in refrigerator for a month.
  5. Stuffing: Mix all ingredients thoroughly and refrigerate before assembly. Cover 6 racks or other molds with cling film. Take 6 slices of orange from the syrup, let the syrup drain and put one on the bottom of each molds.
  6. Heat oranges syrup with water and orange liquor, almost boiling. Cut cookies to size Ramekins, and dip them in syrup. Then immediately lay out throughout surface molds close to each other.
  7. Then put the filling and cover it with soaked cookies. Wrap the ramekins in a film and refrigerate until cooked to serve.
  8. Before serving, unfold the cassettes and place them on a batch plates by removing the film. Cassettes can be stored for 2 days.
