Strawberry crisp with rhubarb

Frankly, rhubarb is a little bit bitter, therefore, to balance the taste, it makes sense to combine it with sweet fruits, like strawberries. Filling:

  • 1 liter peeled and quartered strawberries
  • 4 petioles of rhubarb, cut 1.5 cm long
  • 1/2 tbsp. Sahara
  • 1/4 Art. corn starch
  • Zest and juice of 1 orange
  • 2 tbsp. l balsamic vinegar

Upper layer:

  • 1 and 1/4 Art. whole wheat flour
  • 1/2 tbsp. oatmeal “oatmeal”
  • 1 tbsp. brown sugar
  • 140 g butter cut into slices the size of pea
  • 1 tsp vanilla extract
  • A pinch of salt
  • 1-2 tbsp. l water
  • Whipped cream or ice cream to serve

Recipe preparation:

  1. Preheat the oven to 180C.
  2. Filling: Put all the ingredients in a large bowl and mix well. Put the filling in 8 ramekin (portioned ceramic molds for souffle) or in 1 wide shallow baking dish.
  3. Upper layer: Mix the flour in a food processor, oatmeal and brown sugar in pulse mode. Add oil vanilla extract and salt and continue to “pulse” until the mixture will look like dry crumbs. Add 1 tbsp. l water and beat in the previous mode until the crumbs begin to stick together a little among themselves, the mixture will turn out lumpy. If the mixture is still looks dry, add another 1 tbsp. l water and whisk.
  4. Sprinkle the filling with the cooked crumbs. Bake in preheated oven until all the filling starts boil, and the top layer does not become crispy and does not brown, about 25-30 minutes Serve crisp warm with whipped cream or ice cream.
