Strata with Chili and Cheese

Ingredients for the recipe:

  • 10 tortillas corn or wheat tortillas sliced pieces of 5 cm.
  • 225 gr. Oaxaca cheese or Muenster cheese (French semi-soft cheese) grated (about 2 tablespoons)
  • 225 gr. Pepper Jack cheese grated (roughly 2 tbsp.)
  • 4 chilli peppers blanched, cut lengthwise, without seeds
  • 1/2 tsp chili powder
  • 1 bunch spring green onions with bulbs, pre cut the stems into sleeves of 5 cm., each onion – 4 parts
  • 1/2 tbsp. corn or wheat flour
  • Vegetable oil for deep fat (3-4 tbsp.)
  • 8 eggs
  • 3 tbsp. milk
  • Coarse salt and freshly ground pepper
  • Sour cream, chopped jalapenos and / or minced cilantro for decorations (optional)

Recipe preparation:

  1. Preheat the oven with grill. Put peppers on a baking sheet skinned up. Add green onions and bake for 7-8 minutes, until the peppers peel and blacken the onion fry around the edges. Poblano put in a large bowl, cover cling film and leave for 10 minutes. With fingers remove peppers peel, then dry them well. Coarsely chopped pepper and green onion bulbs. Mix them with flour in a medium bowl, set aside until you fry cakes.
  2. Cover the baking sheet with paper towels. In a pan with with high edges or in a roasting pan over medium-high heat approximately 2.5 cm. vegetable oil to a temperature of 175 degrees. Slowly fry the cakes for 5 minutes, periodically stirring. They should be solid, but not browned. Lay out flat cakes on paper towels.
  3. In a baking dish with a volume of 1.5 liters. put half toasted cakes. Top with half the onion and pepper mixture and half of each cheese. Put a layer of the remaining cakes on top, a mixture of onion and pepper. Put cheese on top.
  4. In a large bowl, beat the eggs with milk, add 1.5 tsp. salt, pepper to taste and chili powder. Pour the egg mixture into the dish for baking. Cover and refrigerate for 8 hours (better all night long).
  5. Remove the dish from the refrigerator 30 minutes before cooking, remove the cover. Preheat the oven to 150 degrees. Bake in for 50 to 60 minutes. The strata should rise slightly lighten up on the top, and only grab a little in the middle. Before serve for 10 minutes. Lubricate on top sour cream and sprinkle with jalapenos and / or cilantro.
