Boil 1 kg. small tubers of purple potatoes in salted boiling water with 1 tsp. white vinegar, about 12 minutes; drain the water. Cut the potatoes into halves or quarters and mix with 2 lime juice, 1 tsp. ground cumin and 1/2 tsp. dried oregano and paprika. Add 1 tbsp. diced yellow sweet pepper, 1 chopped small jalapeno pepper, 1/3 tbsp. chopped cilantro and 1/4 tbsp. olive oil. Season the salad with salt and mix. Sprinkle with young cheese on top.
