Soba Chicken Salad – Detailed recipe cooking. Time: 1 hour. Difficulty: Easy Servings: 4 – 6 The recipes use volumetric containers with a volume of: 1 glass (st.) – 240 ml. 3/4 cup (st.) – 180 ml. 1/2 cup (Art.) – 120 ml. 1/3 cup (st.) – 80 ml. 1/4 cup (st.) – 60 ml 1 tablespoon (tbsp.) – 15 ml. 1 teaspoon (tsp) – 5 ml
Ingredients for the recipe:
- 340 gr dry soba noodles or other buckwheat noodles
- 1 stripped, lightly boiled and chilled chicken skinless bone
- 1 peeled and ground peppers and minced peppers jalapenos
- 1/2 tbsp. chopped red bell pepper
- 1 peeled and sliced and sliced cucumber
- 3 tbsp. l sesame oil
- 1/4 Art. chopped green onions (green only tops)
- 1 tsp chopped garlic
- 1 tsp chopped ginger root
- 1/2 tbsp. creamy peanut butter
- 1/4 Art. soy sauce
- 1/4 Art. chicken broth
- 1/4 Art. chopped fresh cilantro
- 2 tbsp. l fish sauce
- 1 tbsp. l sherry
- 2 tbsp. l fresh lime juice
- 1 tsp Sahara
- 1/2 tsp red pepper flakes
- 2 tbsp. l chopped roasted unsalted peanuts

Recipe preparation:
- In a large saucepan, bring the water to a boil. Put the noodles and boil until soft, about 7 minutes. Strain through a sieve and rinse with cold running water. Strain again and transfer to a large bowl. Stir with a tablespoon of sesame oil, cover and refrigerate.
- In a bowl of a food processor, mix 2 tbsp. l green onions jalapenos, garlic and ginger, whisk at high speed. Add the remaining 2 tbsp. l sesame oil, peanut butter, soy sauce, chicken stock, cilantro, fish sauce, sherry, lime juice, sugar and pepper flakes. Add to taste the noodles to taste and mix. Stir the noodles with strips of chicken, bell pepper, cucumber, peanuts and the remaining 2 tbsp. l green onions. Serve.
