Dessert “Apple pie a la mod”, or a pie with a scoop of ice cream, made in a convenient form of a miniature cookie sandwich for a couple bites. It is convenient to eat with your hands without getting dirty, and it tastes like real homemade pie. Bake cookies from shortcrust pastry, apply vanilla ice cream and apple on flat sides of cookies stuffing, and then fasten two cookies together. You can store these sandwiches in the freezer and enjoy them anytime, when you want a cake or ice cream. Ingredients for the recipe:
- 2 apples Golden Delicious, Gala or Fuji (approximately 0.5 kg.), peeled and diced and diced at 0.5 cm.
- 1 tbsp. l freshly squeezed lemon juice (from half a lemon)
- 0.5 tsp condiments for apple pie
- 1 tbsp. Sahara
- 200 gr. butter at room temperature
- 1 tsp corn starch
- 1 and 3/4 Art. premium flour
- 0.5 tsp baking powder
- 0.5 tsp fine salt
- 1 large egg
- 1/4 tsp vanilla extract
- 2 tbsp. vanilla ice cream slightly softened

Recipe preparation:
- In a medium-sized bowl, mix lemon juice, seasoning for apple pie, apples and 1/3 tbsp. Sahara.
- In a medium-sized pan over high heat, melt 2 tbsp. l (30 gr.) Butter. Add the apple mixture and mix, to completely cover with oil. Turn down the heat to moderate cover and simmer, stirring occasionally, until apples become soft and translucent, about 20 minutes; if the mixture gets too dry and starts to fry ahead of time, add 1/4 tbsp. water and continue to simmer.
- In a small bowl, combine corn starch with 1 tsp. water and pour into the apple mixture. Bring the mixture to a boil to activate starch and cook until it thickens and boils, about 1 more minute. Transfer to a bowl and set aside.
- Place the grills in the upper and lower third of the oven and preheat the oven to 175 ° C. Cover 2 parchment baking sheets paper.
- In a bowl, whisk the flour, baking powder and salt. In another with a hand mixer, beat the remaining 12 tbsp. l (170 gr.) butter and 2/3 Art. sugar until lush, about 5 minutes. Stir in the egg and then the vanilla. Slowly in 2 sets mix in the dry ingredients.
- Pick dough for 1 tbsp. l and roll into balls. Lay on prepared baking sheets at a distance of about 5 cm from each other and press to make flat discs about 0.5 cm thick. Bake cookies until they freeze on top, but still pale, about 15 minutes. Cool cookies on baking sheets.
- When the cookies have cooled, turn it over. Half cookie put 1 tsp. apple filling. For the remaining half put cookies 1 tbsp. l vanilla ice cream. Take cookies with apple filling and hold it to the ice cream cookies, and serve immediately. Store in the freezer for up to 3 months. Before serving, put the cookies out of the freezer for 5 minutes, to make ice cream softer.
