Recipe:

Cook 230 gr. dried udon noodles according to instructions on the package; drain and let the noodles cool. Grill 1 bunch of green onions, turning until they appear marks from the grate, 3 minutes. Cool and chop. In a large bowl mix 3 tbsp. l tahini sesame paste, soy sauce and rice vinegar and 2 tsp. dark sesame oil, sugar and grated ginger. Add 1 – 2 tbsp. l water and mix until homogeneous state. Add noodles, fried spring onions, 2 tbsp. bean sprouts and 1 tbsp. cooked edamame soybeans, chopped carrots and julienne young peas in pods; mix. Sprinkle the salad with toasted seeds sesame seeds.
