Soak 1/4 tbsp in cold water. thinly chopped red onions, set aside. Mix 2 tbsp. l white wine vinegar, 1 small chopped clove of garlic, 1 tsp. Dijon mustard and a pinch of sugar, constantly whipping, gradually add 1/4 tbsp. olive oil. Mix with 450 gr. thinly sliced porcini mushrooms and 1/2 tbsp. chopped parsley. The water in which the onion was soaked drain, add onions to the mushrooms with 1/2 tbsp. chopped thin slices of pecorino cheese (hard Italian sheep cheese). Salt, pepper and mix. Sprinkle salad with olive oil and sprinkle with extra cheese.
