For couscous:
- 1 tbsp. l safflower oil or grape oil pitted
- 1/2 tbsp. whole wheat couscous
- Coarse salt
For salad dressing:
- 1/4 Art. cider vinegar or apple wine
- 1 tbsp. l honey
- Coarse salt and freshly ground black pepper
- 1/3 Art. safflower oil or grape oil pitted
For salad:
- 6 outer leaves from a large head of radicchio
- 1 small fennel head, sliced in 0.5-1.2 slices cm.
- 1 tbsp. seedless green grapes cut into halves
- 3/4 Art. toasted walnuts
- 1 large gala apple, coreless, sliced cubes of 0.5-1.2 cm.

Recipe preparation:
- Cook the couscous: heat in a large saucepan oil over moderate heat. Pour the couscous and fry in for 4 minutes until golden brown. Add 3/4 s. t. water and 1/4 tsp salt and bring to a boil. Turn down the heat so that the water just simmer slightly, cover and cook for 10 minutes, until the liquid does not absorb. Remove the roof, set the stewpan aside and let cool.
- Prepare the dressing: mix in a small bowl a whisk vinegar, honey, 1.5 tsp. salt, 1/4 tsp black pepper and butter.
- Make a salad: mix apples in a large bowl, fennel, grapes, walnuts and couscous. Drizzle with dressing and mix well to let the salad soak in it.
- On each plate, put 1 sheet of radicio. Then lay it out salad in the leaves.
