Ramen Frittata

This hearty Asian frit is cooked in Asian style with ramen noodles (or instant noodles) and minced chicken. Amazing dark sesame oil, oyster sauce gives it a distinctive taste and pickled ginger. Half-cooked noodles mixed with fried minced chicken with shredded cabbage, poured with beaten eggs and fried in a pan until the frit completely freeze. Ingredients for the recipe:

  • 1 pack 90 gr. ramen noodles (not a seasoning bag need)
  • 1.5 tsp dark sesame oil
  • 2 tbsp. l vegetable oil
  • 200 gr. minced chicken
  • 1 tbsp. l oyster sauce
  • 2 tbsp. mixes for cabbage salad
  • 6 green onion feathers, chopped
  • 8 large eggs
  • 2 tbsp. l thinly pickled ginger stripes
  • 340 gr small cabbage bok choy, cut longitudinally in half

Recipe preparation:

  1. In a medium-sized saucepan, bring the water to a boil. Add noodles and cook until al dente, about 2 minutes. Drain and add 0.5 tsp. sesame oil.
  2. Heat 2 tsp. vegetable oil in a pan with non-stick coating with a diameter of 25 cm. over medium heat. Add minced chicken and 2 tsp. oyster sauce, salt and pepper. Fry, stirring, until the meat is white, 2-3 minutes. Add mix for cabbage salad, green onion, the remaining 1 tsp. sesame oil and a large pinch of salt. Fry until cabbage will fade, 2 minutes. Put the mixture in a bowl and wipe to the pan.
  3. In a large bowl, mix the eggs, pickled ginger, 3/4 tsp. salt and a pinch of black pepper. Add the noodles and chicken mixture. In a pan over medium heat, heat 1 tbsp. l vegetable oils. Add the egg mixture and reduce heat to moderately low. Gently stir with a silicone spatula until the eggs begin freeze for 1 minute. Fry without bothering until frit browned from below and almost does not freeze from above, 7-8 minutes. Flip the frit on a plate, then put it back in pan to fry, 3-6 minutes. Transfer to a dish.
  4. Meanwhile, in a large frying pan with non-stick coating on over medium heat, heat the remaining 1 tsp. vegetable oil. Add the bok choy remaining 1 tsp. oyster sauce and a pinch salt and black pepper. Fry until golden brown, 4 minutes. Serve with Frittata.
