Ingredients for the recipe:

  • 1 and 1/4 Art. quinoa
  • 2 medium tomatoes, coarsely chopped
  • 2 tbsp. l chopped parsley
  • 1 tbsp. l white wine vinegar
  • 4 slices of bacon, cut into small pieces
  • 1 medium bunch of broccoli, cut off the inflorescences and cut (about 2.5 tbsp.)
  • 1 small ear of corn, cut grain (or 1/2 tbsp. frozen corn grains)
  • 2 cloves of chopped garlic
  • 150 gr. spinach
  • 2 feathers of green onion, finely chopped
  • 4 large eggs

Recipe preparation:

  1. Prepare quinoa as indicated on the package. Mix tomatoes with parsley, vinegar, 1/2 tsp. salt and a few pinches of ground pepper. Leave on for 20 minutes to let the tomatoes give juice.
  2. Saute the bacon in a large skillet over medium heat, stirring occasionally until crisp, about 10 minutes; remove 2 tsp. fat and set aside. Add broccoli to bacon in pan and fry until crisp, about 3 minutes. Mix with corn and garlic and cook until the corn becomes soft, 2 minutes Mix with spinach, adding it in batches, and cook until it fades. Add the vegetable mixture and green onions in quinoa; salt it.
  3. Dry the pan and heat to a moderate heat. Add the left bacon fat. Break the eggs into the pan; salt and pepper and fry until the squirrels are seized, and the yolks will still be liquid, about 3 minutes. Spread the quinoa mixture in bowls. Place tomato and scrambled eggs on top. Oatmeal recipe porridge with fried eggs.
