Pumpkin Pancakes with Pecan Syrup

Syrup

  • 1 tbsp. maple syrup
  • 5 tbsp. l chopped toasted pecans

Pancake

  • 1 tbsp. flour mixture for fritters recipe see here
  • 2/3 Art. cold water
  • 1/3 Art. pumpkin puree
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground ginger
  • Cooking oil spray
  • Butter

Recipe preparation:

  1. Make pecan syrup: mix maple syrup and pecans in a small bowl suitable for heating in microwave oven. Microwave at high heating for about 25 seconds. Set the pecan syrup aside and keep it hot.
  2. Cook the pancakes: in a medium bowl, mix the flour mix for pancakes, water, pumpkin puree, cinnamon and ginger (not mix the mixture for too long, the mixture should not be homogeneous).
  3. Sprinkle the pan with vegetable oil and heat to average temperature. Put in a pan for 2 tbsp. l test. Fry for 2 minutes or until bubbles appear, then turn over the pancakes and continue to fry for another 2 minutes. Shift Pancakes on plates. Put a piece of pancakes on top butter and pour in warm pecan syrup.
