Pancake Cake with Muesli and Plums

Ingredients for the recipe:

  • 3/4 Art. muesli (without dried fruit), and a little more for sprinkles
  • 2 plums, finely chopped
  • 2.5 tbsp. milk, and a little more if needed
  • 1/4 Art. fat cream
  • 1.5 tbsp. flour
  • 6 tbsp. l (90 gr.) Unsalted butter, melted and slightly chilled and a little more to grease the pan
  • 1 tbsp. whipped soft curd cheese
  • 1/2 tbsp. apricot or plum jam
  • 2 tbsp. l Sahara

Recipe preparation:

  1. In a blender, mix muesli and 1 tbsp. milk and grind until almost homogeneous consistency. Add the remaining 1.5 tbsp. milk, flour and melted butter, chop until smooth consistency. Pour the mixture into a bowl, cover and leave for 1 hour. (You can prepare the mixture in advance, put it in the refrigerator on night, and before cooking, warm to room temperature).
  2. Preheat a 25-inch non-stick pan on medium fire and butter. Pour 1/4 tbsp into the pan. batter, spread it over the entire surface of the pan. (If the dough is too thick before baking the next pancake, add some milk to it). Fry the pancake 1-2 minutes before golden crust. Gently flip the pancake and continue fry it on the other hand for another 30 to 60 seconds. until golden brown. Place the pancake on a baking sheet covered with parchment paper. Fry the remaining pancakes by greasing the pan with butter and adjusting the temperature if necessary.
  3. Form a cake: set aside 1/4 tbsp. cream cheese for top of the cake. Put one pancake on a plate, grease it curd cheese. (If the cheese is poorly spread, put it in microwave for 15-20 seconds.). Sprinkle with a little muesli. Put the next pancake on top and spread it with jam. Repeat with the rest of the pancakes, alternating layers curd cheese and granola with jam. Finish the cake with a pancake.
  4. In a small bowl, mix the remaining 1/4 tbsp. cottage cheese fat cream and 1 tbsp. l sugar, beat until smooth. The mixture should slightly thicken. Microwave oven mix the plums and the remaining 1 tbsp. l Sahara. Put in microwave for 2 minutes. Pancake the cake on top cheese mixture and plums, sprinkle granola. Cut the cake into portioned pieces.
