  • 2 tsp baking powder

  • 0.5 tsp salt

Confectionery crumb (shtreisel)

  • 1/4 Art. light brown sugar, with a dense filling at measurement
  • 0.5 tbsp. flour
  • 1.5 tsp ground cinnamon
  • 1/4 tsp salt
  • 45 gr. cold butter, cut into pieces
  • 3/4 Art. chopped walnuts, (optional)

Glaze

  • 0.5 tbsp. powdered sugar
  • 2 tbsp. l natural maple syrup

Recipe preparation:

  1. Preheat the oven to 175 ° C. Lubricate with butter and sprinkle flour 25 cm. cupcake baking dish with a hole in the center.
  2. In a mixer bowl with a mounted spatula attach butter and sugar until cream, beat for 4-5 minutes. before light texture. Stir in the eggs, 1 at a time, then add vanilla extract and sour cream. Sift flour into a separate bowl, baking powder, soda and salt. Turn the mixer on low speed, add the flour mixture to the dough and mix until combined. Finish kneading with a spatula to make sure the ingredients are completely mixed together.
  3. For the preparation of confectionery crumbs, pour in a bowl brown sugar, flour, cinnamon, salt and butter and rub it all with your fingers until you get crumbs. Optional stir in the walnuts.
  4. Put half the dough into the mold and distribute it with a knife. Sprinkle on top 3/4 tbsp. confectionery crumbs. Next layer distribute the remaining dough and sprinkle the rest on top crumbs. Bake for 50-60 minutes while a toothpick inserted in the center will not stay clean.
  5. Allow to cool on the wire rack for at least 30 minutes. Gently shift cake on a serving plate with crumbs up. In a bowl, mix with using a whisk, powdered sugar and maple syrup, if necessary add a few drops of water to them to make flowing glaze. Use a fork or spoon to glaze the cake, adjust the amount of glaze to your liking.
